NOK NOK WHO’s THERE? BEST COCKTAIL BAR IN QUEENSLAND
By Hayden Wood ·
Tucked into the back of Fortitude Valley, Nok Nok is not big, not overbuilt, and not padded out with the kind of budget that usually gets the industry clapping before the first drink hits the bar. It is a small, sharply run pocket venue powered by two people who are partners in life, partners in service, and increasingly, one of the more interesting double acts in Australian drink culture.
This is not one of those operations dressed up in branding language and consultant polish. This is a venue with a pulse. Marina runs the floor with warmth, intelligence and instinct. Josh drives the creative direction with a style that is culinary, ambitious and gloriously unbothered by trend-chasing for its own sake. Together, they have created a place that feels part neighbourhood living room, part fever dream, part serious cocktail lab.
Philosophy of Hospitality
As Josh put it, “It always comes back to the concept of the drink and what fits best.” That line explains more than just his menu at Nok Nok. It explains the room, the service style, the spirits list, and the wider philosophy of the place. Nothing feels there to impress for the sake of it. Everything has a reason. Now for lay people like me, understanding these reasons requires some deeper philosophy – but an attempt to drink your way to enlightenment is my choice for contextual understanding. It’s no small feet either. There’s some 100 cocktails on offer here so check your liver and your bank balance before heading in.

Queensland's Best Cocktail Bar | Prestige Awards 2026 = Nok Nok
Literally as we were having this interview an award arrived that settled any doubt that Nok Nok is defiantly the place to hop on your bike and get down to try some of the cocktails on the menu. If the award from Prestige in the UK is bestowed upon your skills and dedication, we should all be celebrating this. We should also be watching closely at what happens next.
And yet the bar never disappears into self-seriousness. That is where Marina’s influence lands with force. “We want people to feel like they’re in their best friend’s living room,” she said. That is not just a nice sentiment. It is the operating system. Nok Nok may look polished, but it does not behave like a velvet-rope temple of cocktail theatre. Hospo workers are welcomed like kin. Regulars are greeted with hugs. Guests are invited in, not sized up.
That sense of belonging matters because so much of the Australian bar world still mistakes exclusivity for relevance. Marina and Josh have gone the other way. They have built a bar that is warm without being soft, serious without being stiff, and creative without disappearing up its own glassware.
How to Pick An Aussie Winner Before They Win?
The philosophy of Nok Nok’s hospitality comes through perfectly in their fat-washed Old Fashioned, built on Angel’s Share Maize Whisky from Imbue Distillery. The drink is not just a menu item. It is a statement of intent. Josh has spoken openly about wanting to champion Australian spirits wherever possible, and when the local liquid genuinely works, he leans in hard. “Angel’s Share Maize Whisky (Bourbon like corn based whisky from Victoria) is absolutely perfect in our Old Fashioned,” he said, and in the glass, the logic is undeniable.
The whisky brings richness, softness and a deep, rounded smoothness that gives the drink authority without heaviness. It does not feel like an imitation bourbon trying too hard to play an American role. It feels Australian in the best possible sense: confident, characterful and comfortable in its own skin. Fat-washing adds that lush, silky contour, but the whisky still cuts through beautifully.
Need to Kick Start a Side Hustle?
Marina sees the bigger picture too. “It’s just the two of us doing what we love,” she said, almost in disbelief at the scale of what they are pulling off. And that is the thing. In an industry full of overfunded sameness, Nok Nok is cutting straight through the cheese.
Two people. One tiny bar. A serious drink. And more cultural weight than plenty of venues ten times the size.
